Recipes and Notes:
Monday: Turkey Teriyaki Stir Fry with Rice
Modifications: used coconut aminos vs. soy sauce (due to husband soy allergy), only used 1 Tablespoon sugar (the recipe suggests an amount of sugar that’s too high in my opinion), added an entire head of broccoli to increase the amount of vegetables and my kids love broccoli.
Notes: my daughter who usually doesn’t eat meat loved this recipe.
Tuesday: Chicken Enchiladas served with chopped lettuce and avocado for topping
Modifications: used corn tortillas vs. almond tortillas (nut allergy), added refried pinto beans to filling. I do this by stirring in half a can of beans to the shredded chicken before I start stuffing and rolling enchiladas. I do this because I think beans are healthy, my kids like them, and it adds a creamy texture.
Notes: her enchilada sauce recipe is a game changer and super easy to make! I just don’t add the chipotle chili powder - we don’t like the flavor.
Wednesday: Smash Burgers with Broccoli Cheese Soup and Leftover Roasted Sweet Potato slices

Notes: did not plan to serve broccoli twice this week but it was freezing and we needed hot food after soccer practice. I usually just serve these burgers with an easy salad. I always pair with potatoes because my husband and I eat our burgers over the salad without a bun. I batch roasted the sweet potato earlier in the week to add to meals.
Thursday: Sheet Pan Chicken Parmesan with spaghetti and marinara sauce and sauteed zucchini
Modifications: I used store bought gluten-free Italian breadcrumbs, and Rao’s marinara sauce vs. cooking down tomatoes as she suggests.
Notes: my new favorite recipe! I crave this all the time now and my family enjoyed it too.
Friday: last minute decided to order pizza with friends. I made a large garden salad to round it out!
Other:
My daughter and I made this lovely little citrus dessert for memorial day, and it was SO GOOD and as my daughter says, “asethetic” haha! Will continue to make this again and again. *I did decrease the sugar content by half and it was perfect for us.
